STEC infections occur primarily from eating contaminated food - raw or undercooked meat, inadequately pasteurized milk and unwashed produce. Our real-time STEC assays can identify the most important non-O157 Shiga toxin-producing E. coli (STEC). These include the big six defined by USDA FSIS as beef industry adulterants and the top five in the EU regulations.
